Bonini's Aceto Balsamico Tradizionale di Modena Extravecchio is ripen in dark and silent aging rooms, refined for years through a series of barrels of different woods. It is then extracted and bottled according to two certified quality levels: (1) it is aged for at least twenty-five years (“extravecchio” balsamic vinegar), and (2) following DOP regulations, the raw material used to make the Traditional Balsamic Vinegar of Modena comes from grapes of the Trebbiano variety, which have been grown for centuries in the province of Modena.

Bonini's Traditional Balsamic di Modena is a very mature, exceptional balanced, and a smooth and syrupy vinegar that is unquestionably amazing on a rare fillet steak, fruits, desserts and as a digestivo. Whatever used on, one teaspoon per person drizzled as the last ingredients after any heat process and just before serving will impress the palates of all your guests.

Bonini's condimento (family) balsamic vinegars are produced in the traditional way of the Modena area - without the addition of wine vinegar (IGP) - with typical local grapes and a slow acidification of the cooked must.

The DOP (Protected Designation of Origin) label means that the manufacturer has been officially approved and that consumers can be guaranteed of purchasing the unadulterated culture, tradition and quality of a product that is unique throughout the world.
