Garritano 1908 has been preserving the incredible figs from Cosenza, Italy for over 100 years. The company was founded by Pasquale Garritano and is now in the capable hands of his grand-daughter, Carmela. The Garritano family was the first to preserve dried figs in the city of Cosenza in Calabria. Cosenza, nestled in the Crati Valley, is blessed with the light breezes and limited rain that create the perfect environment for the figs to develop intense flavor and sweetness. The key behind Garritano 1908 is selecting fresh figs of the very highest quality. The figs unique to Cosenza are derived from the Bifera Dottato variety, considered one of the most prized figs in the world. The figs are golden in color, with tiny seeds. Carmela and her family pay close attention to each step of the drying and preserving process, adhering to traditional recipes that were established at the founding of the company and are guarded secrets of her family. This results in compromised quality for the Garritano 1908 figs.
Garritano 1908's Melazzo di Fichi (fig syrup) is a rich dark fig syrup deliciously drizzled on ricotta cheesecake, roasted fresh figs, pork, or added to a vinaigrette for blanched green beans, salad, or grilled chickory.
