CATEGORY: Imported Italian Aged Balsamic Vinegar Condiment
Dating back to the ancient Romans, Saba (Mosto cotto d'uva) comes from grape juice (must) cooked down, becoming dense and sweet. It's the same must used for balsamic vinegar, except cooked down even more, to about one-third its original volume. Perfect for ricotta and mature cheeses, polenta and omelets, or simply added to ice cream and fruit.
PRODUCER INFORMATION |In 1598, Giuseppe Giusti opened his vinegar business in Modena, Italy. Now celebrating the company’s fourth century, the Giusti family has made balsamic vinegar in the same building since 1605. Top-quality grapes, natural fermentation and a decade of aging account for the marvelous transformation of white grapes into the dark, mellow vinegar that gives Northern Italian cooking one of its most celebrated flavors.
