100gr | Maria Grammatico Quince Paste | Cotognata
Maria Grammatico maintains traditional methods and standards for all the sweet treats and pantry items she creates at her small rustic pasticceria in Erice, Sicily. Quince paste, called Cotognata, is made from a purée of quince (a Mediterranean fruit related to both the apple and pear) boiled in water, then mixed with sugar and cooked until it becomes a beautiful, deep reddish hue. The resulting jam is packaged in dense, firm 'bricks' which are cut by hand. Serve slices of cotognata with Pecorino or Stagionato sheep and cow's milk cheese. It is also delicious in a panini with proscuitto, Pecorino and arugula.
