Maria Grammatico produces estratto in the traditional way. Using a local variety of San Marzano tomatoes, she grinds the tomatoes into pulp, which is spread onto taulieri (long wooden boards) and left to dry in the sun for 8-10 days. Once dried, it is mixed with sea salt and placed into candari (clay jars) and covered with Extra Virgin Olive Oil. This estratto di pomodoro is unlike regular tomato paste. Traditional methods, mixed with the hot Sicilian sun, create a product that is extremely aromatic and full-bodied. Use it to add an extra layer of flavor in tomato or meat sauces. It is also delicious spread on grilled bread and drizzled with extra virgin olive oil.
